Neujahrsbretzel (German New Year's Pretzel)


  1. 4 cups all-purpose flour
  2. 2 1/2 tsp active dry yeast
  3.  4 Tbsp sugar
  4.  1 tsp salt
  5.  4 Tbsp unsalted butter at room temp.
  6. 1 egg at room temp.
  7. 2 cups milk using 4-5 cups of flour)
  8. *******
  9. 1 egg for egg wash

  10. Combine milk, yeast and sugar and let set till bubbly.  Add salt and flour and knead.
  11. Raise 1 hour.  Make into a rope and twist into a pretzel shape.  Let raise another 45 minutes or so.  Brush with a whipped whole egg and add any toppings before putting in oven.  This pretzel had sesame seeds and Pink Himalaya salt on top.  
  12. Bake 400 degrees 25-30 minutes or until done.

  15. 1-1-2022  I cut this recipe in half for all ingredients except the flour and yeast.  I used about 2 1/2 cups of flour and 2 teaspoons of yeast.
