Lemon Pound Cake


1.5 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup unsalted butter, softened 
1 cup sugar
3 large eggs, room temperature
1/4 cup sour cream
Juice of one lemon 
zest of 1 lemon (approximately.  add more or less depending how how lemony you like it)
1 teaspoon vanilla extract 

1. heat oven to 350 degrees 
2. grease a 9 x 5 loaf pan 
3. beat butter until creamy. 
4. Add sugar and beat on high speed for 2 minutes. 
5. add egg one at a time. 
6. add sour cream, lemon zest, lemon juice and vanilla and beat until combined. (this mixture looks like it is curdled. It's not--and it will blend once other ingredients are added. 
7. add flour, baking powder, salt and blend just until combined. 
8. pour into loaf pan. 
9. bake 45-50 mins. (tent with foil towards the end to avoid overly browning.) 
10. remove and let cool for 1 hour.  
11. frost! 

Frosting: 
1.5 c powdered sugar
1 tablespoon milk 
1 tablespoon lemon juice   (adjust as necessary for desired consistency)
