Ingredients
2/3 cup shortening (I use butter)2 2/3 cups sugar
4 eggs
(use flax for egg substitute-1 Tbsp ground flax and 3 Tbsp warm water for each egg. Let set 15 minutes)
1 can (1 lb) pumpkin
2/3 cup water
3 1/3 cups all purpose flour
2 tsp soda
1 1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp cloves
Optional:
2/3 cups chopped nuts
2/3 cup raisins
Heat oven to 350 degrees
Grease two 9x5 loaf pans.
Cream shortening and sugar until fluffy. Stir in eggs, pumpkin and water. Blend in flour, soda, salt, baking powder, cinnamon and cloves.
Pour into pans.
Bake about 70 minutes or until knife or tooth pick comes out clean from center
