Carol's Bread :)

1      package active dry yeast  (I use rapid-rise)
3/4   cup warm water (105 to 115 degrees)
3/4   cup lukewarm milk
1/4   cup sugar
1/2 - 3/4 teaspoon salt
1/4   cup melted butter
4 1/2  cups all-purpose flour

Dissolve yeast in warm water. Let set for 10 minutes.  Stir in warm milk, sugar, salt and butter.  Use a whisk to mix.  Add 1 cup of flour at a time and mix with whisk.  With the 3rd or 4th cup, put on counter and kneed. Only add enough flour as needed for a soft dough.

Wash bowl and put a little oil (tsp) at bottom.  Put dough in bottom of bowl and turn over after coated with oil.  Cover and let rise for 45 - 1 hour.

Reshape and put in greased or sprayed pan.  This recipe will make 1 loaf and 1 mini loaf.  ( Or 2 fried buns :)

Cover and let rise until almost double.  About 45 minutes.

Bake 400  20 - 30 minutes or until done

Rub butter on top. Let set for 10 minutes and remove from pan onto rack to cool.

Make it a rye!

Substitute 2 cups of rye flour
Increase milk 1/4 cup
Add 2 Tablespoons caraway seed

Or make cinnamon rolls with the original recipe! Let rise an hour then use rolling pin to flatten.  Add butter and brown sugar.  Roll up and cut and place in greased pan.  Let rise than bake for 20 minutes or so.  Make icing of powered sugar, a little bit of vanilla and a little bit of milk.  Stir and pour on when the cinnamon rolls come out of the oven.
