This recipe is a great one to make in the fall for the boys! (it does have quite a bit of chicken in it--I plan on experimenting and cutting back on that but I'm going to post the original recipe! It has a good taste to it--and I didn't mind the meat :)
Combine in crockpot:
28 oz chicken stock (or that much water and 4 bouillons)
3 cloves garlic
2 tsp cumin
2 tsp oregano
1 tsp salt
3/4 tsp crushed red pepper
3 frozen chicken breasts. (i had costco ones--they were large. will cut back next time to maybe two?)
Cook on low 6-8 hours. 30 minutes before serving shred chicken with two forks. add the following:
2 cans great northern beans, drained
1 can shoepeg corn, drained
2 Tbsp fresh lime juice
4 Tbsp fresh cilantro (more or less, depending if you like cilantro.)
Serve!
