2 1/2 c. to 3 c. all purpose or bread flour
2 tablespoons chopped fresh or 1 tablespoon dried rosemary
1 tablespoon sugar
1 teaspoon salt
1 package regular or quick active yeast
3 tablespoons olive or vegetable oil
1 c very warm warm
2 tablespoons olive oil
1/4 c grated Parmesan cheese
1. mix 1 cup of flour, rosemary, sugar, salt, and yeast
2. add 3 tablespoons oil and the warm water
3. beat with electric mixer on medium speed for 3 minutes, scraping bowl frequently
4. stir in remaining flour until dough is soft and leaves side of bowl
5. place dough on lightly floured surface. knead 5 to 8 minutes until dough is smooth and springy.
6. grease bowl with shortening.
7. place dough in and cover loosely with plastic wrap and let rise for 30 minutes or until dough is doubled.
8. grease 2 cookie sheets
9. gently push fist into dough to deflate. divide dough in half.
10. shape each half into a flattened 10 inch round on cookie sheet
11. cover loosely with plastic wrap lightly sprayed with cookie spray--and let rise for 30 minutes
12. heat oven to 400 degrees. gently make 1/2 inch deep depressions about 2 inches apart in dough with fingers.
13. carefully brush with 2 tablespoons of oil; sprinkle with cheese.
14. bake 15 to 20 minutes or until warm.
