Quinoa stuffed Red Peppers
Make quinoa. (1 cup quinoa to 2 cups water) Cook for about 15 minutes until liquid is absorbed.
1 small diced onion
2 teaspoons garlic
1 diced zucchini (small)
1 diced tomato
1 cup tomato sauce
salt/pepper to taste
mozzarella cheese (I used cheddar in the above pic)
Cook zucchini, tomato, onion garlic until soft. Add remaining ingredients. Stuff peppers.
Line pan with foil or spray bottom of pan.
Cover with foil
Bake 350 degrees for about 45-60 minutes.
Uncover, add cheese and bake another 15 minutes.
