Bread and Butter Pickles


Combine Cucumber  (Over-stuff a 2 quart mixing bowl of cucumbers for this recipe which equals 8 cups or 2 quarts)
     3 Onions sliced
     4 teaspoons Salt

Let stand 3 hours.  Drain and wash off salt water.

Heat to boiling:
     1 cup Brown Sugar
     1 cup Vinegar
     1 teaspoon Celery Seed
     1 teaspoon Turmeric

Add rinsed and drained cucumbers/onion and simmer.  Bring almost to boil but do not boil.  About 5 minutes. Remove from heat.
Fill jars with 1/2 inch head space. Seal in *sterilized jars, 10 minute in a hot water bath.

*An easy way to sterilize jars is to wash them well in hot soapy water.  Dry them off.  Then put on a cookie sheet, right side up, at 225 degrees for 15 minutes.  Turn off oven and leave them in there until you use them.  Boil lids and rings in water.  Keep them in the hot water until use.

Yields 2 quarts
