"Best Banana Cake I've Ever Had"



Ingredients

1 1/2 cups bananas, mashed ripe
teaspoons lemon juice
3 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup butter, softened
2 1/8 cups sugar
3 large eggs
2 teaspoons vanilla
1 1/2 cupts buttermilk


Directions 

Preheat oven to 275 degrees

Grease and flour a 9 x 13 pan or the like

In a small bowl, mix mashed banana with the lemon juice, set aside

Cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy

Beat in eggs, one at a time, then stir in 2 tsp vanilla

Beat in the flour, baking soda, salt alternately with the buttermilk.

Stir in banana mixture

Pour batter into prepared pan and bake in oven for one hour or until toothpick inserted in the center comes out clean.

remove from oven and place directly in freezer for at least 45 minutes (covered with foil). This makes the cake moist.

Frosting

4 oz butter softened
 4 oz cream cheese
2 cups powdered sugar
1 teaspoon vanilla

Cream together.


Ice the Cake and ENJOY!!!!
