Seeded Bread



1 1/2 cups warm water
1 packet or 2 1/4 tsp yeast
2 Tbsp honey
1/2 tbsp salt
1 Tbsp whole flax seed
2 cups whole wheat flour
1 3/4 cups All purpose flour
2 Tbsp raw sunflower seeds
2 Tbsp rolled oats



Combine warm water (105-110°F), yeast, honey, salt, flax seed and flours. Knead with dough hook or by hand. Put a little oil at bottom of bowl and add dough. Turn over. Cover and rise one hour.Make hole in dough and add sunflower seeds and oatmeal.  Work seeds in dough. Put in loaf pan. Cover and rise for one hour.
Preheat oven to 425°.   Slash the bread 2 or 3 times with a knife. Place in oven on middle rack. Pour hot water into a shallow pan on the rack beneath.  Bake the bread for 26 to 35 minutes.

This bread is awesomely good!  It's great for grilled (shredded) sharp cheddar and gruyere cheese sandwiches.  :)
